Simple Solution ~ (or Go Fishing for Fresh Wild Caught  ~ no bacteria fish!)

  1. Be CLEAN yourself ~ wear a white lab coat – like the butchers!
  2. CREATE A ‘SANITARY ENVIRONMENT’ to avoid CROSS CONTAMINATION ~ in one sink ~ Hot Soapy water with Salt or Vinegar (or both) ~ FDA SHOULD KNOW BETTER!
  3. Keep meat & seafood in a bowl separate from sink ~ 
  4. 1st rinse  -(other sink or separate bowl) all meat, seafood & papers that they are sent home from Store ~ treat like a baby’s diaper – keep separate for immediate disposal!
  5. Rub with Salt, let stand ~ then add more water & soak for 10-15 minutes Rinse & PAT dry ~  rinse paper towels & add to the discards ~
  6. 2nd rinse, SOAK & DRY – either Vinegar or Whey – from Pasture-fed dairy – discard rinse & pat dry (discard towels)
  7. If not still smelly ~  REPEAT STEPS ABOVE ~
  8. Prepare a Lemon Juice marinade  ~ 

 Marinate Lemongrass Chicken (or fish) 30 minutes at room temperature up to 24 in the refrigerator – the longer the better!

Let chicken (fish)  rest.  Let your chicken (or fish) sit at room temperature for 15-30 minutes before cooking so it will cook more evenly.
